Pinterest not a round up at all {the one where I say Happy Birthday Kerry!}

Firstly I need to apologise for not posting a round up last week. My excuse was a friend’s 40th birthday.
Secondly I need to apologise as this week I am kind of breaking my own rules. Due to a friend’s 30th birthday.
Our very own Kerry, the brains behind this blog, is turning 30 – man she’s so young!
To celebrate I am offering her the scrummiest cake in the world that is constantly requested in my house for my the hubs’, son’s and daughter’s birthdays. I say offering. I’m posting the recipe here!

Melksham Mum’s Best Ever Chocolate Fudge Cake

For the cake you will need…

6oz butter
4 large eggs
6oz dark brown soft sugar
8oz drinking chocolate
2oz SR Flour

For the buttercream you will need…

3oz butter
3oz icing sugar – sieved
few drops of vanilla extract

For the icing you will need…

1oz butter
4oz icing sugar – sieved
1-2 tbsps milk
1 tbsp cocoa powder

First grease and line two 8″ sandwich tins and turn on your oven to 170-180 c.

Cream the butter and sugar until light and fluffy.
Add the eggs one by one and beat well.
Sieve the flour and chocolate into the mixture.
Beat well.
Pour into the two tins.
Bake for 30 minutes.

When cool beat the icing sugar, butter and vanilla extract and sandwich the cake together.

To make the topping, gently melt the butter and 1 tbsp of milk.
Beat in the icing sugar and cocoa powder.
If the mixture is too stiff just add more milk.
Pour over the cake.

EAT THE CAKE!!
