Nutella Porridge

Nutella, Nutella, Nutella…. ohhh its magical. Oh btw this is Tracy, the girl that has been gone forever. I know you missed me. but hold the cards and flowers and just make this. It’s a wonderful day to start off your day.

Basically make your porridge like you normally would, once its done cooking add a decent sized spoonful into the middle and mix it around. I didn’t take a picture of that for you because its not the prettiest thing….you can imagine. It does, however, taste absolutely amazing!

I already have a post scheduled for next week so I will be getting back into the swing of things ๐Ÿ™‚

Breakfast Fajitas

In my last post I showed you how to make Steak Fajitas, I had actually planned to use the steak for fajita’s for breakfast the next morning BUT my family enjoyed it so much that the entire steak was finished within 15 minutes. I had to switch things up a bit, but me, Mr. A and the kids enjoyed these for breakfast ๐Ÿ™‚

Take a tortilla, heat it in the oven for a few minutes…just enough to heat it, keep an eye on it because it will burn quickly.

Cook yourself a few sausages, an egg (one per fajita) and some cheddar cheese.

Slice your sausages and cheese and put all ingredients into your hot tortilla. Add a nice dollop of hot sauce (not on the kids of course) and wrap it all up and enjoy!!

Steak Fajitas with Jalapeno Mac and Cheese

One of the things that we love in this house are Fajitas. You can go out for them and pay, but I prefer to make them at home because they normally taste pretty close to the same :). I always like to be in the comfort of my own home when eating something messy too haha.

I started out with two really nice steaks that I got on sale for less than $6 for 4 pounds. I seasoned it liberally with coarse sea salt (The bigger the better), pepper (Always white when it comes to this house), some Burger Seasoning, and stick it all in a bowl. Throw in a bit of hot sauce and mix it all up. The hot sauce helps the seasonings stick to the steak. YUMMY!

I sliced the steak up into long strips and then sliced across. You want the pieces small enough to fit inside your tortilla shell without being too big that you can’t close it properly or eat a piece without it falling out.

Then cook your steak to your liking. Remember that you don’t want to cook it too well (even if you like it well done) because it will make it more tough when you are eating it.

Set your meat aside and cut up your cheese into strips. I like to use extra sharp white cheddar, cut up some Jalapeno’s and whatever else you like. Normally we add some sour cream, lettuce and onions but we wanted a quick meal so we just kept it simple.

You also want to heat your tortillas up. A lot of people skip this step, but the best reason why I can give you to do it is because they are more pliable. They tend to fold up a LOT better when they are warm not to mention they taste way better. So trust me, if you normally don’t heat them just try it once. It only takes a few minutes because you just want them to be warm to the touch, not piping hot.

Then you just assemble your little creations and get to eating. I didn’t take a picture of my plate because mine is boring… I only eat one Fajita, no veggies and a little bit of Mac-n-cheese. My husbands plate has much less room on it ๐Ÿ™‚

You will also notice that there is a nice helping of Mac-n-cheese on his plate… this is the new Jalapeno Mac-n-Cheese from Kraft. It. is. delicious.
If you don’t have it available then what you can do is make your own version of Mac-n-cheese.Tthen put your Jalapeno’s through a food processor,but don’t have a heavy hand because you don’t want a paste, you want them to be chopped very finely.
Set them aside and take a few different kinds ofย  cheese…. I like some Asiago and a really extra sharp cheddar (as in the one you used with your fajitas). I do recommend tasting your cheese together though. Some people like Asiago but don’t like it with Cheddar.

Mix your new cheeses and the Jalapeno’s together into your pasta. Mindblowing. Seriously… really tasty and people will think that you spent a much longer time making it than you actually did. You are very welcome ๐Ÿ˜‰

Weekly Cooking Roundup #1

The past two weeks I felt a little better {I have been struggling for weeks with a mystery illness that we still have yet to figure out} so I actually got back into my kitchen and started cooking/baking again.

So instead of giving you one recipe this week I decided to give you 3!

… Oh you are so welcome!I’m not going to physically write out the recipe’s to all, but I will include a link in the picture so this post isn’t 4 pages long!

Let’s start with a new recipe that I found. I was looking on Pinterest for quick biscuit recipes. I found one that only needed 2 ingredients so I gave it a go:

The next thing I cooked was Cowboy Casserole. It was a quick favorite in our house. I have made it a few times and the plates are clean every time. I must warn you that it doesn’t look like 5 star meal, but I haven’t met someone that doesn’t like it!

The last recipe of the roundup is Cinnamon-Sugar Donuts. These are delicious! They take no time at all and the kids loved them. The best part about them is you can top them in so many different ways!

Now if you step back you will realize that I gave you a great meal with biscuits for dipping and dessert. That wasn’t a mistake ๐Ÿ˜‰
